Berries with Lemon Curd Cream

Recipe Serves 4 to 6

A great quick dessert for any occasion.

Ingredients

1 punnet strawberries, washed, hulled and quartered
1/2 x 300g box Creative Gourmet frozen Blueberries
1 x 300g box Creative Gourmet frozen Raspberries
1-2 tablespoons icing sugar, to taste
200g light cream cheese, at room temperature
300mL double cream or mascarpone
¼ cup Lemon Curd or Lemon Spread
mint leaves, to serve
almond bread, to serve

Instructions

  1. Combine the berries in a bowl and sprinkle with icing sugar to taste. Cover and set aside to allow frozen berries to thaw, stirring occasionally.
  2. Beat cream cheese, cream and Lemon curd together. Cover and refrigerate until required.
  3. To serve: Spoon berries and lemon cream into glasses and top mint leaves.  Serve with almond bread.
