Cherry Cassata ice-cream

Recipe Serves 6 to 8

This dessert can be whipped up in minutes and stored in the freezer for a day or two for a ‘make ahead’ dessert. You could freeze in individual moulds if wished.


Top Tips

 

Ingredients

1/4 cup raisins or sultanas
1/4 cup currants
1/4 cup orange or mixed peel
1/4 cup chopped toasted almonds
2 tablespoons rum, brandy or orange juice
1 cup Creative Gourmet frozen Pitted Cherries*
1 litre good quality vanilla ice cream, softened

Instructions

  1. Line a 6 cup pudding bowl or large loaf pan with plastic wrap, leaving an overhang.
  2. Combine raisins, currants, orange or mixed peel, almonds and rum, brandy or orange juice. Cover and set aside for at least 1/2 hour, stirring occasionally.
  3. Place ice-cream into a large bowl. Cut frozen cherries in half and beat into ice cream with raisin mixture. Spoon into prepared bowl or pan. Cover and freeze overnight. 
  4. To serve, unmould cassata onto a plate.  Slice and serve.
