Berry Cheesecake

Top Tips

To prevent the colour from the frozen berries running into the pale cream cheese mixture, only remove them from the freezer when you’re ready to stir them through. 

Ingredients

250g granita biscuits
125g butter, melted
750g light cream cheese
2/3 cup (150g) caster sugar
2 eggs
Grated rind and juice of 1 lemon
400g Creative Gourmet Frozen Mixed Berries

Instructions

  1. Preheat oven to 180ºC or 160ºC fan. Lightly grease a 22cm round springform pan.
  2. Place biscuits in a food processor and process until they resemble breadcrumbs. Add butter and process until combined. Press mixture into prepared pan to come 4cm up sides. Chill for 15 mins.
  3. Meanwhile, using an electric mixer, beat cream cheese and ½ cup of sugar until smooth. Add eggs, one at a time, beating well after each addition. Stir in lemon rind and half of juice. Quickly stir through half of frozen berries and pour mixture into prepared shell. Bake for 45 mins, until set. Cool in oven with door ajar, then refrigerate for 6 hrs or overnight.
  4. Meanwhile, place remaining frozen berries, sugar and lemon juice in a non-reactive saucepan. Stir on medium heat until sugar dissolves. Simmer for 5 mins. Press through a sieve and discard seeds. Set aside to cool. Serve cheesecake drizzled with berry sauce.
