Berry Champagne Cocktail

Recipe Serves 4-6

Ingredients

½ cup (110g) caster sugar 1 cup (150g) Creative Gourmet frozen Raspberries (unthawed), plus extra to serve
750ml bottle Champagne or sparkling wine

Instructions

Dissolve sugar in ½ cup (125ml) water over low heat. Add berries and simmer for 2-3 minutes, then pass through a sieve, pressing down well to extract juice. Discard seeds.
Place a little raspberry mixture in each glass. Top with wine and a few berries.
