Hot Raspberry Souffles

Luscious and light, these hot fluffy raspberry soufflés are an impressive dessert. And don’t be mistaken, soufflés really are quite easy to make.

Simply… prepare the dishes, make the raspberry puree base and let it cool, then fold in the whisked egg-whites and sugar…spoon it into the dishes and bake. It’s as simple as that!

To help you (if you haven’t made a soufflé before), I’ve included helpful tips and a straightforward method which is very successful. Serve it straight from the oven as with most soufflés it does collapse quickly. Individual soufflé dishes are available in most kitchen shops and department stores.

Blueberry, Walnut & Golden Syrup Pudding

Your family and friends will definitely need to save room for this delicious self-saucing pudding. I’ve based it on a favourite recipe from my dearest Nan and have added Creative Gourmet frozen Blueberries and some crunchy walnuts. With the golden syrup, it’s certainly a comforting dessert for a cold winter’s night. I like to serve it straight from the oven with ice-cream.

If you do have leftovers (I’ll be surprised!), simply warm the remaining pudding in the microwave until hot and serve.

Berry & Apple Brown Sugar Crumble

The rich ruby-coloured mix of hot berries and tender Granny Smith apples combine beautifully in this crumble. With the brown sugar and muesli topping, it’s a ‘must-have’ dessert for the last weeks of winter.

In the first weeks of spring, I’ll be sending you some light & easy berry recipes. Until then, enjoy the warmth of these lovely home-baked sweets. I’m sure they’ll become the desserts your family and friends always ask for.
