Time for baking

With the arrival of the cooler weather, it’s the perfect time for some home baking. I’m sure many of you will be participating in the Cancer Council’s Australia's Biggest Morning Tea on May 26th. With that in mind, I’ve just developed some delicious new recipes for you - Cherry, Sour Cream & Coconut Muffins and an easy Blueberry & Walnut Teacake. Both are fabulous recipes for morning tea.

There’s also a recipe for a tempting Blackberry & Apple Free Form Tart to share with family and friends on a chilly evening. Creative Gourmet frozen Blackberries team beautifully with the canned pie apple in this sweet tart. It needs nothing more than a dollop of cream!

When baking with Creative Gourmet’s frozen berries and fruits, don’t defrost them to add to the recipe, just use them straight from your freezer.  Too easy!

Until next time…. happy baking.

Cherry muffins
Cherry, Sour Cream & Coconut Muffins

I think this is one of the best muffin recipes that I have created (if I do say so myself). Everyone who has tried them loves them! Moist and sweet, they’re perfect for morning or afternoon tea. They’re also terrific for the school lunchbox.

Creative Gourmet frozen Pitted Cherries are one of my favourite products in the range; plump, sweet and conveniently pitted!

Blueberry walnut sourcream slice
Blueberry walnut teacake

Baked in a lamington pan, this teacake is easy to transport and slice which makes it ideal to take along to a morning tea at the office, school or friend’s home. Just before serving, dust with icing sugar and slice.

It’s also nice for dessert, served warm with a scoop of vanilla ice-cream.

Blackberry & apple free from tart
Blackberry & apple free form tart

Well worth the effort to make, the sweet pastry for this tart is made in moments in a food processor. I’ve combined Creative Gourmet frozen Blackberries with a can of pie apple for the filling. It’s simply delicious! I’ve included some useful tips to help you make it too.

We all know we should have 2 serves of fruit and 5 serves of vegetables every day (with ½ cup considered a serve) but sometimes it's easier said than done.

Creative Gourmet berries are a great (and easy) fruit source as they are lower in sugar and energy than most fruits and packed full of super food antioxidants.
