The vibrant Spring Racing Carnival is here! That means bright and bubbly celebrations, fashion, flowers and food. I thought I’d add to the occasion with my new berry recipes that are perfect for Melbourne Cup Day and spring entertaining.

Based on the classic Bellini, this berry-pink bubbly cocktail is most impressive and a breeze to make. Use Creative Gourmet frozen Mixed Berries and make the puree in advance and keep it chilled in the fridge. To serve, simply pour the chilled berry puree into glasses and top with your favourite bubbly!

These luscious little raspberry tarts are filled with creamy mascarpone swirled with sweet raspberries and white chocolate. Simply irresistible! For easy entertaining, I serve the tarts after chicken and mayo finger sandwiches, and they steal the show with a sweet finale.
