Home baking brings many pleasures and to me nothing is more inviting than the lingering aroma of something sweet baking in the oven. With that in mind, I’ve enjoyed developing these fabulous new Baked Cherry Cheesecake, Blueberry Cream Scone and Raspberry & Banana Bread recipes using Creative Gourmet frozen berries and fruits.

As a busy working mum, I enjoy being pampered on Mother’s Day so I’m planning to bake my Raspberry & Banana Bread the day before with my boys and they love to whip up the High Antioxidant Berry Healthy Smoothie (see the recipes below). I’m hoping for a wonderful berry breakfast in bed! I’d like to take this opportunity to wish all mums a happy Mother’s Day!

These delicious scones remind me of the wonderful time I spent baking with my Nan. I loved baking with her and my whole family enjoyed the delicious scones we made together. Scones are not hard to make, simply follow my recipe and use a light hand, and you’ll be whipping up a batch of scones in no time.

This moist café-style Raspberry & Banana Bread is fabulous sliced and served warm on the day it’s baked but it also keeps well in the fridge and once cold, it’s easy to slice and toast. It’s great to serve for morning or afternoon tea, pack in a lunch box or serve as a warm after-school snack.

This luscious rich cherry cheesecake is best made the day before it is served. I’ve based the recipe on the classic New York style cheesecake and swirled through Creative Gourmet frozen Pitted Cherries. The cherries team perfectly with the cream cheese filling. A sure favourite, it’s the ideal dessert for entertaining and special occasions.

Whip up this fabulous healthy smoothie in minutes! It tastes terrific and is loaded with beneficial antioxidants. I’ve included LSA in it which is a great vegetarian protein rich in omega 3 fatty acids, fibre and B vitamins.
The antioxidants found in this smoothie combat the destructive free radicals generated by the body every day that cause ageing and health degeneration. They also have protective properties, especially against various forms of cancer.

I’ve teamed plump Creative Gourmet frozen Blackberries with fresh rhubarb in this quick and easy compote that’s cooked in a microwave oven. I make it in advance and store it in an airtight container in the fridge so it’s ready to serve for breakfast or it can be warmed and served with ice-cream or custard for dessert. My kids love it!
