Berry Ice Cream Cones

Recipe Serves 10 to 12

This is a fun way to serve ice cream during the long hot summer! Also great for children’s parties and family BBQ’s. Keep in freezer ready-to-serve. Serves 10-12 depending on size of scoops.

Top Tips

 

Ingredients

1 litre vanilla ice cream, or of choice
1 x 300g pack Creative Gourmet frozen Raspberries
1 x 300g pack Creative Gourmet frozen Blueberries
crushed meringues or macaroons, optional
ice cream cones

Instructions

  1. Place ice cream in a bowl and beat to soften. Stir in as many or as few frozen raspberries and blueberries as you like plus the crushed meringues.
  2. Return mixture to ice cream tub. Cover securely and freeze until required. Scoop into cones and serve, studding ice cream with extra berries if wished.

VARIATIONS :
* Spoon scoops of ice cream into serving glasses and serve with chocolate
sauce drizzled over the top.
* Serve scoops of the berry ice cream on pancakes or Nanna's waffles
