Blueberry Cheese Tarts

Recipe Serves 24

The sauce will keep for up to a week in the refrigerator
Use Mascarpone cheese and lemon curd in place of cream cheese
The blueberry sauce is delicious poured over ice cream,hot cakes, pancakes or waffles


Top Tips

 

Ingredients

2 cups Creative Gourmet frozen Blueberries
2 tablespoons caster sugar
1/3 cup fresh or unsweetened orange juice
1 tablespoon cornflour
1 teaspoon grated orange rind
250g cream cheese, softened
24 prebaked small pastry cases

Instructions

  1. Place blueberries in a saucepan with 1 tablespoon sugar and the orange juice. Gently simmer over a low heat until plump and juicy
  2. Stir in the cornflour and continue stirring over a low heat until sauce has thickened. Cool, cover and refrigerate until required.
  3. Just before serving beat remaining sugar and orange rind into the cream cheese. Spoon into pastry cases and arrange on a serving plate. Top each one with some of the blueberry sauce and serve immediately.
