Blueberry Pudding

Recipe Serves 6 to 8

Ingredients

125g butter, melted
1/2 cup caster sugar
4 eggs, lightly beaten
1 cup desiccated coconut
1/2 cup plain flour
2 cups milk
1 teaspoon grated lemon rind
1 1/2 cups Creative Gourmet frozen Blueberries
Icing sugar, for dusting
Vanilla ice-cream, to serve

Instructions

  1. Preheat oven at 180ºC (fan forced at 170ºC). Grease a deep 6-cup ovenproof dish.
  2. Place all the ingredients, with the exception of the blueberries in a food processor. Process for 1 minute or until well combined. Sprinkle frozen blueberries over base of prepared dish and top with the batter. Bake in the middle of the oven for 1 hour. Stand for 10 minutes. Dust with icing sugar and serve with ice-cream.

This is a great and very simple recipe. I actually put the ingriedents in ramekin dishes. Defrosting the berries and putting a little sugar in is better. The ramikins raise beautifully and it looks great with ice cream on the side for a dinner party
