Cherry Cupcakes

Recipe Serves 12

Delicious served warm with ice cream as a dessert. Creative Gourmet frozen Blueberries could be used instead of Cherries if preferred.


Top Tips

 

Ingredients

150g butter or margarine
3/4 cup caster sugar
3 eggs
1 cup self raising flour
1/3 cup cornflour
1 ½ cup Creative Gourmet frozen Pitted Cherries, chopped
icing sugar and cream, for serving

Instructions

  1. Lightly grease a 12 x ½ cup capacity muffin pan (or line with cake papers). Preheat the oven at 180ºC (fan forced 160ºC).
  2. Using electric mixers, cream butter and sugar together until light and fluffy. Beat in eggs one at a time, adding a little flour. Sieve flours together and fold into mixture.
  3. Stir roughly chopped frozen cherries into cake mixture. Spoon mixture into muffin pan. Bake for 25 minutes or until cooked. Cool in pan for 5 minutes then turn out onto a wire rack to cool. Dust with icing sugar.
