Cherry Steamed Pudding

Recipe Serves 4 to 6

A quick and easy version of an old fashioned dessert. Perfect for the family but also great for winter entertaining.

Ingredients

1 x 300g pack Creative Gourmet frozen Pitted Cherries*
125g butter or margarine, softened
1/2 cup caster sugar
2 large eggs
1 1/2 cups self-raising flour
grated rind 1 orange
1/2 cup milk

Instructions

  1. Tumble frozen cherries into the base of a greased 5-6 cup pudding basin. Cream butter and sugar together in a food processor. Beat in eggs one at a time. Add flour, orange rind and milk. Carefully spoon batter over cherries.
  2. Cover basin with greased foil, pleated in the middle to allow pudding to rise, and secure with string. Place on an upturned saucer in a large saucepan with sufficient boiling water to come half way up the basin (top up with boiling water during cooking if necessary). Cover saucepan with lid and simmer pudding for about 1 hour or until a skewer inserted into the centre comes out clean. Stand for 10 minutes. Turn pudding out onto a serving plate. Serve with custard or cream.

VARIATIONS :
Instead of Creative Gourmet frozen Pitted Cherries you could use Raspberries, Blackberries or Blueberries.
