Cranberry Fruit Cake

This is a wonderful low fat cake which only uses egg whites and minimal sugar. Perfect for a ‘healthier’ Christmas cake.

Ingredients

3 cups mixed dried fruit
2/3 cup brown sugar
1 1/2 cups fruit juice of choice
2 tablespoons rum, sherry or brandy, optional
2 large egg whites, lightly whisked
1/4 cup canola oil
2 1/4 cups self-raising wholemeal flour
1 x 300g box Creative Gourmet frozen Cranberries

Instructions

  1. The day before baking: Combine dried fruit, sugar, juice and rum in a bowl. Cover and stand overnight.
  2. Next day: Preheat oven at 160ºC (fan forced at 140ºC). Line a large loaf pan (base 20cm x 10cm x 6cm) with non-stick baking paper.
  3. Beat egg whites and oil into fruit and fold in flour, fold in frozen Cranberries. Spoon into loaf pan and bake in the lower half of oven for 2 1/2 hours, or until cooked. Cool completely then wrap in foil and store for up to a month in a cool place.

what can i use instead of rum non alchoholic Annette suggests using orange juice instead of rum - should do the trick!
