Cranberry Stuffing (for Turkey)

Recipe Serves For 1 turkey

This quantity is ideal for a large turkey.


Top Tips

 

Ingredients

1/2 cup finely chopped celery leaves
1/2 cup chopped flat-leaf parsley (or 1/4 cup parsley and 1/4 cup thyme)
1/2 cup finely chopped shallots (green onions)
salt and pepper, to taste
5 cups fresh white breadcrumbs
50g butter, melted
5 eggs, lightly beaten
300g box Creative Gourmet frozen Cranberries

Instructions

  1. Combine celery leaves, parsley, shallots, seasoning, herbs and breadcrumbs in a large bowl.
  2. Stir in butter, eggs and frozen Cranberries and stuff mixture into turkey before roasting.

Variations:
Halve the recipe quantity to use as a stuffing for roast chicken or medium-size piece of pork.
