Mixed Berry Puddings

Ingredients

Cooking Spray
500g Creative Gourmet Mixed Berries
190g (3/4 cup) extra light sour cream
90g (1/3 cup) low-fat vanilla yoghurt
2 tablespoons plain flour
2 tablespoons caster sugar
2 x 55g eggs
2 eggwhites (from 55g eggs)
1 teaspoon vanilla essence
Icing sugar, for dusting (optional)
Extra frozen Mixed Berries, partially defrosted, to serve (only if necessary)

Instructions

  1. Preheat oven to 150 C. Spray 6 x 185ml (3/4 cup) shallow round or oval ovenproof dishes with the cooking spray. Place on a large baking tray.
  2. Divide the frozen berries evenly among the greased dishes. Put the sour cream, yoghurt, flour, sugar, eggs, eggwhites and vanilla essence in a medium bowl. Whisk until well combined.
  3. Pour the sour cream mixture evenly over the berries. Bake for 15-20 minutes or until set and puffed slightly. Dust with icing sugar, if desired. Serve immediately.
