Steamed Mixed Berry Pudding

Ingredients

1/3 pack Creative Gourmet frozen Mixed Berries
1/4 cup caster sugar
2 teaspoons lemon or lime juice
1/4 cup treacle
1/4 cup regular milk
1 egg
1 tablespoon butter, melted
2 teaspoons grated lemon or lime rind
1 1/2 cups plain flour
1/2 teaspoon baking powder
1/2 teaspoon bi-carbonate of soda (baking soda)
Cream, ice-cream or custard, to serve

Instructions

  1. Combine frozen Mixed Berries, sugar and lemon juice in a bowl. Spoon berry mixture into a well greased (line base with non-stick baking paper) 6-cup pudding basin.
  2. Whisk treacle, milk, egg, butter and rind together. Fold in sifted remaining ingredients. Carefully spoon into the basin over the berries.
  3. Cover basin with greased foil, pleated in the middle to allow for rising, and secure with string. Place on an upturned saucer in a large saucepan with sufficient boiling water to come half way up the basin (top up with boiling water during cooking if necessary).
  4. Cover saucepan and simmer for about 1 hour or until a skewer inserted into the centre comes out clean. Stand for 10 minutes.
  5. Serve with cream, ice-cream or custard.
