Sugar-Free Berry Spread

Recipe Serves 1 1/2 cups

A low calorie spread for ‘waist watchers‘
Ideal recipe for diabetics
Use on bread, toast, muffins or scones etc
Can be stored in the refrigerator for up to one week


Top Tips

 

Ingredients

1 x 300g pack Creative Gourmet frozen Blueberries
3 teaspoons powdered gelatine
2 tablespoons almost boiling water

Instructions

  1. Place berries in a saucepan over a low heat and gently simmer until fruit is soft and juicy.
  2. Dissolve gelatine in water as directed on packet. Stir into berries, pour into a sterilised jar while still hot. Seal, label, cool and refrigerate until required.
VARIATIONS :
  • Add sugar or sugar substitute to taste if wished.
  • Use lemon juice instead of water for more flavour
  • Use Creative Gourmet Raspberries or Blackberries in place of Blueberries.
